This observational paper studies the effect of handwashing with and without soap at recommended times.
This paper studies which critical times are most important for preventing childhood diarrhea and the findings indicate that before preparing food is is particularly important time for washing hands to prevent childhood diarrhea. The study also found that washing with water alone is not as effective as handwashing with soap.
